I tend to use bulghur wheat as an alternative if I can't find cous cous, not the same but similar, or at least my other half hasn't noticed when it has landed on the dinner plate!!

Make cous cous as above with boiling water, 150g cous cous to 600ml boiling water. Get a jar of sun dried tomatoes in olive oil, cut up some of the tomatoes and stir through cous cous with some of the olive oil. Roast chunks of red and green peppers, red onions, carrots and whatever else you fancy, stir into cous cous and add some balsamic vinegar. Toss cous cous with diced cucumber, diced green pepper, chopped fresh mint and toasted, flaked almonds. Add grated rind and juice of a lemon. Peel and segment 2 seedless oranges (washingtons are good) and add to cous cous, season and toss lightly. These all make great salads.

I use both cous cous and bulgur (cracked wheat) and don't boil either just leave to soak in boiling water. I would second comeonaylin's recipes very versatile both, and a change from rice/pasta. I love the spicy, tomato one they sell ready made in the supermarkets - bulgar I'm sure.
