i have few people ask me for another dessert so i guess i better write one

this is a tipical italian dessert originally from Sicily.

serve 6-8

for the pastry

175 gr.flour

3tbsp caster sugar

salt

115gr. unsalted butter chilled and diced

1 egg yolk

for the filling

450 gr. ricotta (here they produce a similar product it normally come in a trasparent bag they call it beyaz penyr)

125ml double cream (emborg or pynar ok)

2 eggs +1 yolk

100gr. caster sugar

grated rinds of lemon ad orange

to make the pastry sift the flour into a clean bowl add the diced butter. with your fingerstips work in the flour until fully incorporated. add the sugar and egg

yolk. mix until the dough leave the side of the bowl and form a ball.

with a little flour on a work top knead the dough very lightly.cut a small piece

less than a quarter wrap in clingfilm and chill in the fridge. with the rolling pin

work the dough to achive a large round about 3mm thick place it into a baking tin ( butter the tin).chill for 30 min.

Prick the bottom with a fork and bake blind ( place a baking paper into the tin and fill

with baking beans or similar)for 15 minutes into a prehaeted oven at 190-200.

remove the cake from the oven and take the beans out. set aside to cool

to make the filling mix the ricotta with the cream,eggs,egg yolk,rinds and sugar

chill until need it.

smooth the mixture into the pastry with a palette knife. roll the pastry we cutted early into a long strips. place them from one side to the other of the cake to form a mesh wetting the edges with water so they can stick to the cake. bake for 35min at 200. buon appetito
