| hello everyone i have been asked by many of you to post the recipe for my spaghetti with vongole so there it is: 4 portions 800 of spaghetti (barilla n7 o 5, buitoni or agnesi NOT TURKISH IMITATIONS OF PASTA) 1kg of fresh vongole 1tsp of garlic 3 tbsp olive oil chilli (to your taste) 1 glass of white wine 1 tbsp of tomato paste salt\pepper 1\2 chopped onion chopped parsley method: very easy. cooking time: 20 minutes in a large frying pan put oil, garlic, onion and 1\2 of the parsley. cook for 5 minutes (moderate flame). add the vongole, chilli, tomato paste and wine. salt and pepper. COVER THE PAN and let it cook until all the vongole are open (if some of them dont open completely open them with a knife. if they dont open at all then take them out they are full of sand so no good to you). boil the spaghetti, drain and mix together with the sauce. serve on a large tray, sprinkle the remaining parsley. buon appetito guido |

| hi heith, of course i do. for the best result you need to have everything listed below fresh!! all equal doses: prawns, vongole, calamari,mussles, crab's meat, etc. (all the seafood you can find). 1\2 jg of fresh tomato 1 tbsp of tomato paste origano 5 anchovies fillets garlic chilli 1 onion( chopped) parsley 1 glass of white wine salt\pepper 1 glass of fish stock follow the same method of the vongole sauce recipe add all the seafood. you can use cream insteed of tomato. |

| I thought it was 'fruits de mer' and were on earth did you get fresh clams from? I'm coming to raid your private beach, any mussels and the odd oyster as well? Richard |

| A really big thanks to Guido and Lilli for this recipe. I tried it out this evening. Did not have any vongole, so I had to improvise. I didnt have any parsley or chilli either. So, I did everything else as per the recipe, but included fresh Oregano and fresh basil (as opposed to parsley), and chopped baby tomatoes into the pan with tomato paste,wine, onions and garlic. The best I could get as a quick substitue for vongole was mussels, prawns, scallops and languistines which were put into the sauce after cooking. I have to say it was superb. Dished up with spaghetti and parmasan cheese. I am calling this dish the "Tara Tutto". he he he..... I cannot wait to try the vongole. I am shopping for the proper ingredients tomorrow. Anyway many many thanks. It was fabulous. x Love to you both. |

| heres one for you lilli /guido ....was in bolgona last week for few days and locally was treated to some pumpkin pasta and plenty of spinach pasta ....pumpkin sounded yuk but tasted superb in small qtys . you ever done that ?or was that regional food for bologna ? kav by the way mrs kav out next week with her friend so they may call |

| kav, pumpkin it's widly used in italy but the dish you may have had was pumkin ravioli wich is a local dish basically it's ravioli filled with pumpkin mash it's to die for!!!. emilia romagna ( bologna's region) it's the centre of good food and you where very kucky to experience that!!. yes i tasted many times and i love it. if you wish i can reproduced that dish for you if you let me know in advance. guido |

| Buongiorno a tutti! Spaghetti alle vongole is my summer favourite! Try this one, all the ingredients are very easy to find, a fresh and summery pasta dish, found on Jamie Olivers' website!...You can also watch the video online to see exactly how it's made! wild rocket and chilli spaghetti http://www.jamieoliver.com/recipes/pasta-and-pizza/wild-rocket-and-chilli-spaghetti Serves 4 Heat a wide saucepan or frying pan over a medium heat and add the extra virgin olive oil. Add the garlic, chilli and the anchovy fillets and fry gently for a minute or so. Add 2 handfuls of the wild rocket with the lemon zest and juice and then remove from the heat. The rocket will wilt from the heat – mix it well with the garlic, chilli and anchovies. Meanwhile, cook the spaghetti in plenty of salted boiling water, according to the packet instructions, and drain. Tip into the saucepan and toss togettogether with the rocket and chilli sauce. Season well with salt and pepper and the grated Parmesan on top. |
