The best I've tried so far and liked is ,F and F Restaurant -Karaoglanoglu Cad Emir Plaza No 7 Alsancak .Every Wednesday and Saturday booking advised. 0533 864 7962 or 0542 852 6220

exnavalperson, why eat the Greek speaking Cypriot variety? Our hosts, the Cypriot Turks, call it küb. And definitely the best küb I know can be found in Koruçam (see my map of Northern Cyprus ). Unfortunately the majority of the population is Maronite and speak Greek - so probably you are after kleftico after all.

Should you get yourself to Famagusta, enter the City by the old narrow 'gate' road and turn immediately right and a 100yards on the left is a rustic old pretty grotty looking licensed restaurant. Kleftiko is all he does, been there since the 70's. and damn good it is too.

Message 10 - you've never heard of Kleftico - where have you been? The best is round at our our house - in Bury St Edmunds, Suffolk. Our son is coming for supper on Sunday and my husband is cooking.



Joking apart, it is lamb, cooked for a long period in a "well" type of oven. Delicious!

Best I have tried is the RAVINE in Alsancak it is a good size and tasty. I think now they have it Thursdays and Sundays....!!!!!

Pipie,

You need one piece of Kleftico per person ,I get mine from the butcher near the Golden Lady statue in Alsancak. One good sized potatoe, 1 onion and 1 carrot per person.

Peel the veg, wash the lamb and place in a good sized piece of tin foil. Salt and pepper all, add a bay leaf and seal the tin foil. Then get another piece of tin foil and wrap, again giving a good seal. The double wrapping is the secret.

Put in a pre heated oven at 140C and let it cook away for 3-4 hours.

go out and do your shopping while it cooks or go to the pub and have a drink and it will be ready when you come back. Perfect every time. Enjoy

Thats the thing with Cypriot home cooking, everyone makes it different, everyone will say their's (or their Mums) is the best.



1/2 teaspoon of dried mint and oregano goes nicely!



What lamb do you use for your Kleftico?



Some people I know will use the shoulder (my favourite), some use the leg (shank)...What do you use?

burty 1987 - like shoulder and shanks, but tend to use the shanks.



It's interesting that people make this dish in so many different ways. We had it in Greece many times and the recipes varied hugely between Islands.



Never tried the goat, but would like to.

I was in Greece 2 years ago and taested Klestico for the first time.

It was made of lamb coocked in a spesial type of paper for many houres.



I can't wait to eat it again when we get to Kyrenia next summer.

I love Kleftico and usually go to Padisah Restaurant in Girne near Colony Hotel.



Interestingly I wrote some while ago i.e. last year to both Cyprus Today and Kibris to see if they would run "Kleftico Chef of the Year" competition. Where I used to live in UK they used to have a curry chef of the year competition and I thought what a good idea to have a kleftico competition where amateur chefs can compete with professionals. It could incorporate so many of the restaurants and locals and make a good evening out in the preliminary heats going on to a finale where the great and the good try out and make judgement! Yet another way in bringing the communities together. I wish the local media would take this up and introduce something different to add to the quiz nights and bridge afternoons!

I use oregano plus a bottle of beer keeps it real moist,i do not use foil i put lamb shanks or shoulders in roasting dish then make a seal(paste) of flour and water around rim of dish with another roasting dish upside down on top.

Then low oven 3.5 hours works for me.

A now closed Greek restaurant in Bristol used to 'cheat' it by simmering lamb shanks in heavily herbed stock for many hours adding parboiled potatoes to order served with Greek salad. Another fraud, but at 11pm rolling out time from the pub with a gallon of beer down the throat it became passable!

hiya davedee love to you both. Will that work with a clay pot. We use a very old clay pot covered in foil and very slow roast. I just love the taste of the potatoes done this way. The lamb just falls from the bone. When are yo next out xxx

Lemba's, by the school in Lapta used to do a very good Kleftico. Haven't been there for a couple of years, but I remember you had to book.

Halfway House, halfway up the mountain towards Karaman, has the best Kleftico, also fantastic views, you have to call the day before.
