The same one you bought in the UK - short grain, not Japanese.

Look for the shortest fattest rice in the shop. Or ask the shortest fattest customer, they will know.

Don't forget the rice flour.

In the shop you can see the actual rice grains in the packets.

There will be some which are long, some which are medium and some which are short and fat.

To answer your question, I have never seen the specific name on the packet.

Some supermarkets have sticky labels for Brits. Some say Jasmine and others say Basmati.

You want the SHORT FAT one. But they haven't written SHORT FAT on a sticky label, as the rice looks SHORT and FAT!!!

Failing that, go to the restaurant/cafe next door to the Life Hotel, Girne. It's called BHU. http://www. bhu.com.tr. You can buy the best, refrigerated rice pudding amongst a dozen other deserts. They are supplied weekly from Izmir. No one else's taste as good.

Blackie Guido says Yes I would never have used rissoto rice, the turkish equilant is ordinary pirinc rice. God my children loved ambrosia xxx Its hard being married to a chef.
