Best paella uses rabbit not chicken!!! Best I ever tasted cooked in a village on the costa del sol. rice, saffron peas onions, garlic and then the rabbit, fish and seafood lovely!!

adagirl, must have been to the same little village as I did, they used rabbit in the paella that I ate, very tasty

cooked at the table on a stand, waited half an hour but worth it, the smell.............. Oh god ı could eat it every day!!!!

My son lives in Barcelona and he reckons this is an authentic Catalan Recipe , but you can use chicken , pork or rabbit which i prefer to be honest . I'm sorry i dont have the exact weight i just guess

About 350grs of rice

Large prawns mussels

2 cloves of garlic { i use 4

Parsley

Saffron

Monk fish

crushed tomatoes

Clams salt & pepper to taste

Clean clams and mussels and steam in a little water . Throw away any unopened ones .

Heat some olive oil and cook the whole monk fish until browned, add tomatoes , simmer , add garlic ,parsley add saffron , stir , add rice with about 3/4 lt of stock or boiling water , season and cook for few mins .decorate with clams peas and prawns , bring to the boil and put in the oven at 220c for about 20 mins but do check from time to time and add water if necessary . Hope you enjoy , it works for me
