Tempo has preserving sugar but it is expensive. I just use normal sugar and add pectin from a sachet which is in most supermarkets with all the usual baking stuff. It does work as my over stuffed cupboard full of jams and marmalades shows

We use granulated sugar but boil up extra lemon pips (in a muslin bag) if the fruit we are using doesn't have many.

'Im downstairs who has just filled 74 jars with marmalade (and I have yet to do the labels! shucks!) found preserving sugar too expensive, and he does what the other worthy c\ooks above do. He also is a great follower of Delia Smith who reckons you 'don't need to use preserving sugar - it is just ordinary sugar cut smaller'. My beloved also found that when he can't get pectin, then using pips and/or apple helps.

Of course, if one insists on using preserving sugar, it will boosts Tempo's income!

The only thing I find with the lemons here is that they don't have many pips! We get ours from one of our local friends and they're great for lemon meringue pie, lemonade and limoncello or even sliced and frozen to add to G&T so you have ice and a slice combined, but not so good for jams and marmalade! I'll always find a use for lemons!

Well Booitsme! You must get lemons from a different tree to us. We are given lemons by generous friends, and there are thousands of blooming pips. So many in fact that during the making of the last batch of Malataya Marmalade, 'Im downstairs couldn't be bothered to remove them all, and I am now refusing to touch that batch of pip ridden marmalade. Perhaps we could do a swop!

Sounds good to me MarieB as every time I use them to make marmalade I curse the lack of pips and scour each "shell" to see if I missed any!!! I have to say, they do taste wonderful though. Have you tried cranberry and clemetine marmalade? I got some cranberries to make cranberry sauce at Christmas and got carried away making stuffing and forgot to use them so I feel another batch of marmalade coming on! It is the most beautiful colour and very tasty so let me know if you want the recipe.

The pectin I bought was from Supreme and it's a Dr. Oetker one and it has Koruyucu on large letters on the front with a picture of what looks like jam on the front. It is a pack of 3 small sachets (or Poset), I can't remember the price but it's quite cheap if I recall. Happy shopping!
