try a whole side of bacon { thats been de-boned } mix honey, paprika, garlic, ginger, olive oil and juice from a lemon, and the zest of the lemon, rub in the mixture and store for at least 4 hrs, { or more }, wipe off the excess and then bar-b-que, for about 20 min, it just falls apart when carving.

you get the side of bacon in orphanides, it's very cheap around 2.90 euro's a kilo, and a kilo will feed four adults as it's all meat.

Slice half a banana and pieces of Mars Bar on to tin foil squares and scrunch up to make parcels. Pop on barbecue rack or into coals if its really dying down and in a few minutes - done. Serve with cream.

Quick and brilliant BBQ sauce.... Hoisin Sauce, a bit of Worcester and a spoonfull of marmalade. Marinate for an hour and blinkin excellent!

Beer Bum Chicken !!! Seriously stick a 3/4 full Effes Beer up the Chicken Bum and place on BBQ, put on the lid and leave for an hour or hour and half, remove carve and serve........mmmmm the best !!!

Since 'roos' are a bit scarce in TRNC, you could try the next best tucker - 'Road-kill'!



You'll just have to cruise around a bit until you find a big (squashed) dog, or a coupla three mangled cats will do goodo!

Make burgers using mince, garlic, herbs, thinly sliced onions, tablespoon cream (binds it as well as egg) and a sprinkling of chili flakes. Grate some cheese, form a teaspoonful (ish) into a ball and press into the burger making sure the meat seals the cheese into the middle - et voila, cheese burgers with yummy melted cheese on the inside

Tempo do packets of chinese flavouring, and also a minty lamb rub. You just put the chops or pieces of lamb (or chicken) in a plastic bag, pour in the powdered rub and ........rub!! When the meat is fully coated pop into the fridge for a few hours to marinade and then cook in the usual way. Its really good!! The chinese one is great on chicken drumsticks and the minty one makes divine lamb chops.
