I knocked up a tasty meatball sauce the other day, with homemade meatballs of course, and used a base of chopped tinned tomatoes of a well known and respectable brand into which my other secret ingredients were added.

Sauce turned out a little tangy. Tasty but tangy.

How can I reduce the Tanginess of the tomato base ?

try yogurt, we use it if our curry or chillie is too hot x

Always add sugar if using tinned tomatoes to cook with.

Not sure of the science behind Chris's sugar but I have done the Yogurt thingy with Curries and spiced up food.

And as for my secret ingredients, you’ll have to live forever without the learned skills of a master secret ingredient user.

A pinch of sugar is used to offset the acidic taste often found in canned tomatoes. Now can I have your secret recipe please?

I always add a bit of honey or some orange juice (strange that orange juice works but it does seem to deepen the flavour) if I'm cooking with tinned tomatoes - both take that edge off the tangy taste.
