We're moving to TRNC soon and are thinking about making our own bread now we're retiring! Are yeast, strong white and wholemeal flours readily available? Does anyone use a breadmaker?

Hi,

my wife has a bread maker, everything is available so that you can use it here. The flour strong white is a little different and need about 20mil more water or liquid than the usual UK flour. Apart from that the only thing we haven't found here is granary type flour. Wholemeal we buy in the south. Hope that helps.

Hi, I use a bread maker here with some sucess. However it is not simple, I have developed my own receipe and get results that I find pleasing. The flour is not the same as at home but I have found one that gives good results and you can, if you buy in the south, buy british brands. We buy our breadmaker yeast in Liddle in UK, it comes with a good 'date' on it and works well. Also we only use cask water and I think that is important. It also should be said that the local bread here is very good quality and there are many bakers giving a great variety from which to choose and it is almost as cheap as making your own. Hope that helps.

I tend to use everyday 'Bugday Unu' (wheat flour) for almost everything in my breadmaker - I find it to be plenty strong enough for ordinary loaves.

It makes 'o.k.' shortcrust pastry in a food processor too.

I've never found Malt Extract here, North or South, usually get someone to buy it in UK & bring it over.

Starling are stocking a nice "Seed & Grain Flour" (English brand)...... and also a Turkish 7 grain flour - which is a little strong so I use 1 cup and 2 cups Bugday Unu, with great results. Mind you, I only use my bread machine to make the dough, then I shape and bake to whatever I want.......

I tend not to use the bread machine in the summer because the heat accelerates the process and makes the dough a bit too lively so that I have to be careful with it spilling over onto the heating element and burning. Don't like smoky bread. I used to make beer as well but found that Gold Fassl was to my taste and at about 1TL a 500ml bottle made it not worth brewing. Mind you I'm just running out of my stock and the price is now 1.5TL for the 500ml equivalent.
