With regard to the many rumours of staff not receiving the tips, do you know which establishments hand over the tips and which do not? (I'm believe I am aware of the reasons as to why staff do not receive the tips).

Does this influence whether or not you tip?

If you tip, by what percentage, or do you just round it up a few Lira?

From my experience, I cannot tell if the staff I tip, receive it, as on the whole, service is very good.

If I feel that a tip is deserved , I always make a point of discreetly handing it over to the individual staff concerned, rather than settling it with the bill.

why not ask the waiter? some receive the tip direct others have it pooled and share at the end of the week or month. there are some that don't get the tips at all and the excuse being they pay for the free coffee or brandy given to the customers. most of the waiters earn just the minimum wage and rely on tips to support their families, so if deserved we should all tip a few lira as long as we know the waiters benefit, so before tipping in the future just ask discreatly. if they don't receive it then i certainly wouldn't tip to benefit the owners.

Pooling is the fairest way if it is operated well. We all tip waiters, as a rule, but how about the chef who cooked it or the lad preparing the veg. Pooling is the way to go but I can see the point about covering the bad times in winter. If tips are used for this purpose and the establishments stay open and the waiters keep their jobs then surely that's a positive thing?

the best is to handover the tip to everybody who has effort for that food plate to come on the table so i share the tip between everyone, even the washer up. i do point system, if the chef gets 4 points so does the waiter and the washer up or cleaner gets 2 points. it works and all my staff is happy with it.

about not giving the tip at all, never worked in a place like that because its the tip that makes the money for the workers not the minimum wage.

and when i go out i tend to leave 10% if the service is right.
