Skate is in season here in the autumn, it smells of ammonia very quickly as it is going off. It must be absolutely fresh to eat.

Andrew, the ammonia smell is due to the breakdown of urea in the blood. It also leaches out through the skin. If the fish (and this applies to any of the cartilaginous fish family- of which skate is one) is properly bled and stored the smell dissipates. Washing the dressed fish in acidulated water also helps. I used to get my fresh skate from Shoreham Harbour as it came off the boats and sometimes it had a slight whiff even then.... but once dressed and kept cool it was perfect.



Sitting on the harbour arm at Dieppe enoying skate in black butter sauce with capers..... the memories......
