Go to one of the metal/wrought iron workshops - take all your knives that need sharpening and they normally charge a pittance!

What kind of knifes do you want to sharpen?

Some butchers do have very fine knife sharpening wheels that can do the job.

I wouldn't trust any knife with metal workshops..they will ruin them on the grinding wheel..

If they are your best Sabatier's then you should only sharpen them with a honing steel,

Ask a good chef, Im sure Guido would do them for you.

A bench grinder will take small chunks out the metal and you'll end up with a bread knife

I took my Sabatier knives to the key cutter next the Brabantia shop in the square opposite 1001. He did an excellent job and charged me peanuts.

I use a rasp to keep my knives sharp. Works a treat.



Don't know where you'd get one here - may be the ironmongers here can help - I brought mine from the UK.
