1 large onion chopped 2 sticks celery chopped as many tomatoes as you can get in a big pan chopped 2 stock cubes (your choice) salt and pepper sugar to taste cream to taste Fry the onions and celery in a good glug of olive oil until softened. Add the rest and simmer until the tomatoes have broken down. Blend and add the cream to taste. A simple and tasty warming soup at about 10p a bowl probably.

Low fat cheese does just as well instead of the cream..........less calories and Fat.............adding some garlic that has been previously roasted (I do whole bulbs whenever the oven is on and leave it in foil in the fridge, just squeaze out from the clove). basil, oregano or thyme. or even a bit of each. YUM.

message 4 Cottage cheese is a good alternative for lower calories. Blend it first until it is smooth and creamy then add to the soup. Ileli, Guido's, Starlings are all selling cottage cheese now.

Tried this last night and it was very tasty. Had to take the skins off the tomatoes though as just lately they have what appears to be blight on them.

GinaC If you sieve the soup once cooked you don't have to bother with peeling all the toms, also lots of flavour in the skins. Don't worry about marks on them it's natural!!

Why not buy them now and make tomatoe passata & Freeze. I use this all year round for making sauces for pasta and the base for Pizza dishes. Cheaper then buying tins, just follow Mikes recipe for his soup adding Italian herbs. The butlers wife

For a smokey twist Roast or grill some peppers and peel them when blackened, then whizz or chop dependant on your preference and add to the existing tomato soup recipe. Note to Jamie - no Copyright Breach intended.
