I usually microwave the potato for 5 minutes take it out and wash it then sprinkle salt over it and put it in the oven until crisp. Perfect everytime.

Perhaps if it was washed and salted and stabbed several times it may improve it's taste and cook quicker too.

Bill - sounds good, although I would wash it before microwaving. You may also find that rubbing a light coating of olive oil onto the potato before putting in the 'ordinary' oven might crisp up the skin a little. Give it a go

Crispy skin - by far the best part of the potato!

Jean. If I wash it first it will get dry. It needs to be wet so that the salt sticks to it when you put it in the oven.

shrimp my favourite filling is pure butter. Irish if I can get it or Lurpak if I cant, other than that occasionally boring i know either melted cheddar or baked beans,(they have to be Heinz). I really enjoyed the one I baked today after reading Bills post. Much better than the beef sandwich I was going to have.

You cant beat Lurpak......I like bacon and cheese together too, and possibly coronation chicken......but that is rather fattening......ususally stick to tuna....not keen on baked beans even Heinz........my stomach is really grumbling now!!

A slightly different take on a jacket potato that I do sometimes is to cook the potato in the microwave until soft. Cut in half and spoon out as much of the potato as possible, mash with butter, salt and pepper and then add some grated mature cheddar, some chopped parsley or chives and crispy bacon chopped up. Mix it all together. Plonk the 2 halfs of the jacket skins down on a baking tray so they are stood up nice and even and fill with the mash. Sprinkle a little grated cheese on top and finish off in a hot oven for 10-20 minutes until starting to brown on top. As far as my conventional jacket potatoes go I rub them with a little oil, salt and pepper, wrap in foil and cook in the oven until soft to the touch. Fav filling extra mature cheddar and onion (unmelted) or maybe chilli and cheese. Always with plenty of butter mashed into the potato first.

Shrimp, funny enough I don't have anything on the Potato - I just like it with salt and I eat everything including the skin.

I know it may sound strange, but I like raw carrotts in my jacket potatoes.

PaulW, not that strange, if I have a prawn cocktail jacket potato I put shredded cabbage and onion on top of the buttery potato and then the prawns in the sauce. Adds a nice crunch to the creamy, buttery potato underneath.

Once cooked scoop out and mash the potato with some mature cheddar, re-stuff the skins and put some smoked bacon on top, then under the grill to cook the bacon.
