I bought some today from the road side along the old coast road and am not quite sure what to do with it. I have to say it smells more like samphire than the asparagus I am used too. I guess it is the salty air and soil? Can I use it in the same way as "normal" asparagus or has anyone got a special method to share?

wash it then fry with garlic and put eggs in last thing keep stiring ,,,lovely

Nice in a Quiche with tuna or salmon, and sweetcorn - maybe also a little feta sprinkled around, before putting the beaten eggs on top....yum.........

Our wild asparagus in Cyprus are little bitter,so best to boil them for couple of minutes,siv them and run cold water over,it takes the bitter taste away.



Got up at 6.30 this morning,drove over to Gecitkoy lake,picked 3 mushrooms abaout 3-4 inch diamiter,handfull of asparagus.Chopped the mushrooms in frying pan,broke the fresh parts of the asparagus in as well,the juice in mushrooms is enough,cook until juice evapurates,whisked 4 duck eggs in it,stir at low heat until cooked,sesoned with TUZOT and pepper flakes and little lemon juice..................off now,my mouth is watering.

POtato and Asparugus soup.

Cut the tender tips off and save,

peel the tougher bits and saute with some onions , garlic in olive oil and butter

throw in some boiled potato , season

add chicken stock and simmer til tender

use a hand held blender,then strain, add some milk or cream

then add the chopped sauteed tips over the top when you serve,. nice on a cold night with some crusty bread.

Grab the asparagus stalk at each and bend in an upwardsw direction , where the stalk snaps is the best bit throw away the botton section then heat.

Heat a grill pan slightly oiled and cook till just they are starting to turn brown serve hot and cover in Bolsamic vinigar MMMMMMM my mouths watering just writing this
