Maria , you could sort of concoct a version .

Salt

Coriander

Sugar

Onion

Marjoram

Paprika

Chilli pepper

Red bell peppers

Sage

Dill

But i don't know the quantities , if you want me to bring some over let me know nearer the time , or i will forget . I use it on all meats too

Take care , Pat

Hi Spider. You said the fish came in a bag. Was it frozen or fresh? Given that you were presented with the fish in Cyprus, I wonder if it might be red mullet? These are usually 'presented' two or three at a time on a plate as they're not big and by the time you've removed the head, tail and backbone, the remaining flesh is soon demolished! Particularly good with a few chips & local salad and we prefer red mullet grilled. There is also the grey mullet but red is more common in the Med'n areas.

Simbas - doesn't tilapia originate in Africa, around the lakes of E.Africa? Quite a tasty fish I believe but if it has been imported/frozen, do thaw out well before cooking. Much the same size as sea bass but not as tasty imo !

Let us know the results (cooking & taste) and if you are able to identify the type of fish you've been given.

Spider - just had a thought. If you haven't already, why not show the fish to Guido & Lilli ? They may be able to identify them for you. ( If you can get over to Lapta i.e. ! )

Thanks all for your help and sorry I looked on here a little too late ! Just had it tonight Vic is not a lover of fish that may have bones in as he is always the unfortunate and ends up with the one and only bone, as did happen tonight He just loves his skate After defrosting and a blooming hard job removing it from the bone I took the very easy...cowards way out and poached it in the oven with a little milk, butter and fresh parsley It turned out very tasty.Still no idea what it was although very tasty.. the red skin, fin and tail were simmered up for a much better fish soup tomorrow adding some prawns and noodles. I must say I would not buy this fish either fresh or frozen because just the look of it was enough to pass it by ! Please look out for my new thread SHARK ATTACK
