My friend Pakize, who came originally from Adana, is a really good cook and always interested in trying new recipes. She makes wonderful Bulgar Köfte and also perfect Adana Kebab. Yesterday she gave me lamb Köfte wrapped in slices of aubergines. divine!! She also makes a variety of savoury and sweet Börek, so wonderful!!!

Let's hear what other people enjoyed. We are trying to get away from the usual grilled meat etc.

If you want to try any of these or want your own favourite dish cooked, you should come to Dipkarpaz, , the road is perfect now.

Have a tractor Safari, or stay overnight and have a meal at the Damla Restaurant

Taze Fusilli for us - specially made by Enva, our neighbour. It went down well on Royal wedding day.

Not a lover of either actually but like mrsgee Iskender turkish way not cypriot way. I hate the way they cook meat so overcooked however I think they make the best soups in the world. There is one thing I love but can never find it and I dont know the name but its a crepe wth spinach, cheese and mince. Had it on the roof at the colony but cant find it anywhere. I do like pide.I love all the fresh veg and fruits here.To be fair Im not a big meat eater.

Re message 9 @ Brinsley

I should hope not. Cig means "raw" and as such is indeed NOT cooked.

A dish called "The Sultan couldn't believe it" or something similar in Turkish. Had had it in both TRNC and Turkey and I did prefer the Turkish version.

Salahi

That WAS the joke!

I've made it myself but not half as good to the ones I had in Turkey. No doubt the fine art of preparing the bulgur!

Wow.... what a wonderful response!!!!!!!!!! Keep going.

I love 'Imam bayildi' and make that a lot in England as well. as for the Bulgur Köfter, Pakize has a Vegetarian version as well, which I love.

I copied all the name, joky or otherwise to pass on to Pakize (of Damla Restaurant, Dipkarpaz). Some she cooks already and others she will include in her specials.

Hi Dipper - where exactly is the Damla Restaurant in Dipkarpaz - is it on the road going to Golden beach? I like the sound of Pakize's food and would like to pop down from the Malibu beach area to sample it this June. Does she open during the day or just on an evening when she is not on the safari?

Thanks in anticipation

Hi Briggus,

They do open daytime and evenings at the weekend, weekdays it might be best to telephone beforehand. Ring Pakize on 05338756299. She speaks English pretty well, but you can also call me on 05338206798. She is my friend and I like to help her.

It's only a small place but they will cook any specially requested food, if they have 24 hour warning

stilluvithere;

MagarIna bulli-pasta and chicken is most probaply one the easiest meals to cook.

Boil your chicken first, saving the juice, take the chicken out and leave it to cool.Put your pasta into the chicken juice and boil it to nearly cook, then add your cooke chicken either in pieces or shreded in the pasta, cook for further couple of minutes, serve it with it's juice, put some freshly greated halloumi mixed with dried mint, swueeze some fresh lemon juice on top..........munch into it.

Loverly jubberly

There are so few places here that you can actually eat truly Turkish TC food. Why do so many places pander to English palates. If we want British/English food we can make it at home. Thanks Msg. 24, that was the one. DELICIOUS.

Very true Tango1 - I suppose it is demand but why do people want to create a little Britain in other countries - people initially go to a country - because of what it offers - in terms of weather, scenery and culture but then want it to change it! Good traditional Turkish food does take some beating.

Very true tango1 and Briggus

Pakize and Bülent just made the usual barbecued meat and fish with chips and salad. One day I asked if they ate this always at home and the reply was - 'no we never eat this at home' ! when they have friends and family around they make some shish but always many other lovely dishes. Now they will do this in the restaurant as well. You can't have everything everyday, but there are alwaysa couple of specials. The thing is to phone ahead and make a request. Sometimes when we are out for an all day walk, we phone her and say we will be too tired to cook tonight, please make us - imam bayilde, moussaka, Bulgur Köfte etc etc. When we arrive a few hours later, there is a lovely meal waiting. They are only a small place, situated just on the edge of the village on the Golden Beach road. Last year they thought of closing, but suddenly things seem to be looking up. Pakize's other speciality is Börek. She makes many varieties, meaty, veggy, and sweet. Very popul
