will include

bckground to the subject and history

raw materials selection on recipes

methods and techniques applications

interim discussions on progress etc.



Lesson examples:

1. Puff pastry and its variations.

2.Savoury and sweet pastry for pies, tarts, and quiche.

3.Basic sauces : reduction, starch thickened, emulsions.

4. Cake ( English) making . Sugar butter method, All in method.

5. Soups . Introduction . Recipes, great soups of the world. Purees, consomes.

Good luck with your project. Why not separate out your courses to; pastry & desserts, then starters and finally main course dishes? I'd come to the pastry one but more than proficient on the others.
