How are you going to keep it cool please ? because buying meat especially pork at a market stall is inviting danger with the temperatures in the summer months

The Pork Shop in Alsancak often have fresh spare ribs. What i want is ham and decent bacon. What I wouldn't give for decent bacon - decent being defined as: not that dreadful frozen stuff in the supermarkets similar to what Bells and Hur Deniz used to sell the grill isn't soaked with water and some strange white scum when you cook it..

Jovial John, I use the Pork shop often have you not tried their bacon, Superb, and better value than the frozen stuff. Yes as someone pointed out they have always got spare ribs, I wanted some gammon, so they are curing it specially for me, also they have ham. Check them out it is the finest meat I have tasted since I was akid in the 60,s

I use the Pork Shop but whenever I go they never have ham and very few ribs but their pork chops are wonderful so Englishbutch...if you could do "proper" ham that would be fantastic.

Where do these pigs come from? How were they kept when alive. I saw a program(it was actually discussing solutions to the water problem South and North) and a GC farmer was interviewed and he had 5000 pigs and a water shortage!!!!!!!!!!!!!!!!!!!! Even in Englsand I only eat pig products, where I know how the pigs were kept!! Now that would be a great selling point - showing the pigs before slaughter. http://www.thegingerpiggery.co.uk/

JohhnyLee Yes I have tried their bacon but I prefer smoked. I would also go for some decent gammon - the frozen stuff in the supermarkets (including Bells and Ileli) is just too thin. I like a piece about ¾" thick and with plenty of rind - sprinkle the rind with demarara sugar and grill and you have a taste of heaven. If you don't want all that the Pork Shop prepare, and don't mind letting me know when it is ready, I would be very grateful.

Hi Jovial John, I have ordered quite a large piece, (our son his due out and he fancied some) I think it is 25 lira a kg. in my book that is good value for home cured fresh Gammon. Then I will get them to slice it for me . If it is anywhere near as good as the Turkey they got us for Xmas, well then we won't go far wrong. If you've got abread oven you can smoke your own bacon.
