| I think, I remember, seeing last year, there is somewhere to take the olives, from your own tree, have them bottled, and labelled as your own... can anyone shed any light on this for me? |

| I know the Olive Oil factory in Karsayaka will turn your olives into olive oil for you. Not sure if they will cure them and put them into jars, but it would be a good place to ask. |

| The olive oil factory will not bottle them for you. Do you want green olives or black olives? there is a different process for this. Lucia can help you with each process & advice with harvesting. 0542 8839823 |

| there is lots of advice on the net for preserving olives I know for the black, available november-december, the bitterness must be reduced by soaking in brine for the requisite periods with a vertical slash along the side to let it seep away apparently in cyprus they just leave them in salt for a week so they are still very bitter but following an easy net recipe our olives have kept well and sweetened further over time the economics of preserving them in olive oil seems far too extravagant |
