| Spiced crusted rack of lamb with rosemary jus and lentils Carré d’agneau avec croute d’epices, servi avec lentilles et jus de romarin 3 In a mortar, combine all the marinade/crust ingredients to make a paste. Coat the prepared racks of lamb with the paste 4 Place the racks in a pan and roast in an oven at 200ºC for 10 to 12 minutes — for rare to medium-rare — or longer if preferred. When cooked remove the racks and keep warm. 5 De-glaze the pan with stock, add the rosemary and boil to reduce until the jus acquires some consistency. Season to taste. 6 Serve 2 2 cutlets per portion on a bed of lentils. Spoon some jus over the meat. | you should try "chillie pork fillets in low fat cream cheese" weight watchers recipe but very tasty leaves plenty of room for the bent lawyer desert ! seriously tasty can post ingredients if anyone interested etc if not just carry on getting heavier ha ha |

| Lilli where do you get lamb that doesn't taste too strong? I love lamb that's really gamey but the wife likes a much more subtle flavour of lamb... Any butcher you'd recommend? |

| hi groucho i asked guido and his butcher is in the turkish quarter before sele restaurant. the butchers name is ferat, tell him guido send you and explain your requirements. he is a good butcher and will hang the meat for you. take care lilli |

| Thanks Lilli, Could you be a little more precise as the "Turkish quarter before Sele" is quite a few bits of Girne... and I don't recognise the name Sele.... |

| You meet some interesting folk in that part of town, Grouch. In fact it's one of the few parts of Kyrenia that's much the same as it was in 1974. And all the old Cyprus hands know Sele. Where have you been, laddie? Are you sure you live in Cyprus? |

Now to be honest as soon as I posted my request for clarification my wife explained where it is and I realised that Lilli was referring to the myriad little streets behind the Telephone exchange in Girne as the Turkish Quarter.. But it's all Turkish now... ha ha... |
