does anyone have the recipe for this fabulous lamb dish I cant think of the NC name for it I know it takes 4 hours to cook in a clay oven but it is fabulous. Its worth taking a one day trip to NC for

Kleftiko is the name and long cooking is the game...



They light a fire and let it warm the kleftiko oven for four hours... then they remove the fire and let the residual heat cook it for four hours much as would one of those slow cookers of 1980's fame....



If you want a recipe they are available on line.. if you can't find one I'll post a really good one for you...

I do believe the stem of the word Kleftiko is the same as the word klepto as in kleptomania... hence the association of thieves with the kebab...



It is often called Firin Kebab here because of the oven (firin).. but is really pretty much the same dish...

I have researched Kleftioc on the interent but the recipes seem to indicate a different flavour dish to that I tried. Many recipes are Greek based with tomato. I am sure the dish I had (although may be a language problem on my part) began with H on the menu and was a little different to those menu. I had this last week on the terrace at Bellapais and previously at a little cypriot restuarnt on the Karpas peninsula. I went there last week but the restuarant was closed unfortunately.Scampy the reason I did not call on you was that I am sentitive and felt that you may have been uncomfortable with a stranger knocking on your door.

Oracle, I believe is one of those GC's that still believe Cyprus is Greek, the British and Turks are inferior races. She has an amazing memory but it only kicks in post 1974. Now theres a challenge!

She's barking but clever and extremely funny once you get to know the person. She knows she's a fanatical Hellenist and Turkophobe like about half the members on there. Have you ever tried posting there?

Yes I have posted on there.... but many years ago. I tend to read the posts and post infrequently but I have a great respect for many of the members who are articulate and well read from both communities. However it is rather confrontational at times and I think dominated by a few real strong personaliites and clicks. Can be intimidating at times because of the aggressive responses. This then spoils any disscusion.

We have had many on our travels.

Northern and southern cyprus to boot, as well as at our neighbours in north london who are greek cypriots, who do not judge or condemn us on our visits to NC,

A good meal is as good as the love and preparation you put into it, and making your guests feel comfortable and welcome,

Kleftico always go down well, by those that know how to cook it !

this is the recipe that i use , i don't know how authentic it is , all i know is that we like it , it was given to me by a lady who has a gift shop in magusa

1 /lamb , i also use lamb shanks sometimes

2 / whole peeled potatoes

3 / onions quartered

4 / garlic

5 / 1/4 pint olive oil

6 / 1/4 pint lemon juice

7 / oregano

salt to taste

all ingredient amounts are to individuals preference

put all prepared ingredients in large roasting tin

mix olive oil with lemon juice and pour over

cover with foil

cook at 150 c for 4hrs basting the lamb and pots occasionally

remove foil for the last hour

yuo can cook lower temp for longer if prefered , i have done it both ways and it works every time its so delicious , i serve it with roasted veg and turkish flat bread to soak up the juices , really really yummy

Good one Simbas... recipe is about right for the Kleftiko made in the TRNC restaurants...



Item 1... I take it you mean one leg of lamb or several shanks...



For extra flavour you can insert garlic slithers into the flesh of the lamb having made incisions with a sharp knife... (stabbing it is theraputic.. just think of someone you don't like! lol)



You can also rub some salt and oil into the slits.



Another variation is to add a few capers and skinned tomatoes to the dish.. Capers can be sprinkled over the meat when you remove the foil... tomatoes being added to the general juices in the cooking utensil...



I like to add some dry white wine too as this is a great tenderiser and adds some complexity to the gravy...



Long and slow wins the race... I do mine at 160 degrees but 150 is probably close to the heat of the real kleftiko oven...

hi grouch , i adjust it to the amount of people you are catering for , if its for a dinner party i use 1 shank per person if its for a garden party i just use legs cook it in the oven and place it on the heated bbq for people to help themselves themselves , its not that i'm lazy , just like easy entertaining if its for a large number of people , and they love it , i've never tried wine , will do next time , thanks

Rocky.. it should certainly never be allowed to dry out... so add some if on checking you find this is happening... there should be enough juices from the oil and lemon juice (make sure it's not concentrate - natural strength only) and juices from the meat...

For those of you that doesn't have an outdoor brick oven, I saw this on one of those cooking shows.

He used a large terracotta pot and its terracotta base sealed the draining hole with mud and voila' u have a mini brick oven.

Just light the fire in the bottom part then once it gets going put the meat in and the upside down planter/pot over it with the hole sealed . It has to be a large one to hold enough heat..



Good luck if anyone tries it.

Went there today, just made it, opening hours 10 to 1:30, got there at 1:20.



Coming out I saw the sign that said Consulate of North Cyprus. Surely if it wasn't, the British Government would say something about that, would they?



Oh, nice meal with the bruv at La Boheme in Old Compton Street, strolled down to Piccadilly, then to the Mall, Buck House and then Victoria Station for the trip home.

I don't think it's a criminal or civil offence, so why would the UK government bother? It's a bit like these fantasists who get exposed passing themselves off as ex-SAS heroes or turn up at major incidents pretending to be fire chiefs, top cops etc. It's just a bit sad and everyone has a laugh, but nobody takes them seriously because everyone knows they are fake.

Not sure what you mean here about constitutions as there's only one legal one in Cyprus - and any Cypriot who wants to can be represented by it if their leaders show courage. And I think the only winking thing will be a part of anatomy belonging to those who find they don't own the property they paid for. ;-)

ROAST PIKE,...... a Cypriot favourite.



First catch your Pike,.. be careful,.. they are aggressive and feel superior to other 'smaller' fry!



A gutted Pike is a pleasure to behold. Do not remove the head, there is little brain to worry about.



Pikes teeth may appear to smile but are very sharp. The mouth is usually bitter, enhance this by stuffing in as many lemons and limes as you can.



Now enjoy inserting as many hard vegetables from below as you can.



You may wish to assault Pike,... err,.. sorry,... salt your Pike.



Dig a pit, light a fire and place on stones. When hot, enjoy burying Pike, in foil, and cover in soil.



Ignore for as long as you like.



If you forget where you have buried your Pike,... don't worry!



Another one will appear soon, possibly with a different name,..



but all Pike are basically the same.





Roast as above!

I have a theory about how it comes to be Thieves Kebab...



They light a fire in a hole in the ground and heat up a large earthenware cooking pot... keaving it to its own devices while they've got 4 hours to go off and rustle some meat... butcher it and get it back...



Then they cook it for 4 hours without the fire giving off tell-tale smoke as to their whereabouts...



Voila!

COACHIE & hattikins - totally with you on this one. I think they should have a 'political' section of this forum. Quite a number of threads start off interesting and then somehow they get into the Politic's of the trnc. Then the arguments start and before you know the whole thread ends up ridiculous.

Don't get me wrong, I've said before that every one is entitled to his/her opinions but I do feel that there should be somewhere for posters to go and argue their political preferences.

ROBnJO - this is an old recipe handed down in my family.

Get three Eggs andbreak them into a dish.

Add some Milk

Whisk round with a Fork until you have a yellowish mixture

Put dish in microwave for about two minutes

Take dish out and stir the mixture

Put dish back into microwave fir about another two minutes

Check and see if mixture is now 'fluffy'

Voilą - you now gave Scramled Eggs a La Doyen

IT ALL WENT HORRIBLY WRONG!



I put the can of beans in a saucepan of boiling water, but after a second bottle of 'cooks perks', the can exploded, leaving the ceiling spattered with baked beans and causing a small fire which was exacerbated by the burning toast. I extinguished with the Soda Syphon, resulting in all the electrics going off.



There were now only 10 mins till our guests arrived, so resorted to No1's egg recipe and hammered some nails into the fusebox. I then had to throw the noisy smoke alarm out of the window.



Perhaps I should have removed the broken eggshells from the bowl.



1 guest spat out the eggs and fell onto the still hot hob, receiving burns.



When the ambulance arrived, a medic slipped on the eggy floor and I accidently knocked him out whilst trying to stop him falling.



When the police arrived, I was arrested.









I won't be requiring any more recipes as I have been told I am facing 2 years of Porridge.

try thıs one.....never faıls usıng a standard oven



buy 4 lamb shanks and keep them ın the frıdge for 3 days to mature.

put 2 each ın roasting bag, add and swırl plenty of olıve oıl around them.

half teaspoon of garlıc crushed, dıtto mıxed herbs

add medıum sızed onıon cut ın 4 peıces

crank in some black pepper.

loosely tıe bags, place ın hot ven

45 mıns at 180 to seal the meat fan on

one and a half hours at 160 fan off

turn bag every half hour

let stand for 15 mıns whılst yu steam the vege

Hırsıs Kebab (Kleftigo, Thief Kebab).

The story: A thief stole an old goat in the field, he started cooking the traditinal shish kebab, as the meet was about to be cooked, he saw a field watchman caming towards him. He buried the meet together with the fire.

After the field watchman passed away, he re open it and found it was cooked and it was very nice.



The original Hirsis kebab: is cooded in a cley oven, the meet on its owen no potetos or sourse. You serve it with bread onion and salat.



The kebab that is cooked in a cley oven, in a trey (or foil) with potatos, tomatos etc is Firin Kebab not a Hirsis Kebab.
