Lemon Syrup Loaf Cake



Cake

Butter (hard marg like Evim, Sana) – 125g

Sugar – 200g

2 Eggs

Zest 1 medium lemon

Self raising flour 175g

(or plain/sade flour/un with 1 pkt baking powder/hamur kabartma tozu)

Pinch salt

4 tablespoons milk



Syrup

Juice 1 and a half lemons

100g sugar



Oven – 180 degrees C, gas mark 4 ----- 45 mins (check by sticking toothpick in – should come out clean)



Cake

1. Line (bread) loaf tin with greaseproof paper (Pisirme Kagidi)

2. Cream butter (soften little first) and sugar together.

3. Add eggs and lemon zest – beat well

4. Add salt and flour slowly (and baking powder if using plain flour) – fold in gently but thoroughly.

5. Now add milk

6. Spoon into tin – bake 45 mins.



Syrup

7. Heat sugar and syrup GENTLY stir until sugar all dissolves and simmer for 5-10 mins. (Do not leave or put heat up high or you will have sticky black mess and a destroyed pan – I’ve done it )



Take cake out of oven, cool for couple of mins, p

Take cake out of oven, cool for couple of mins, pierce cake several times with toothpick or similar and spoon the syrup over. Leave cake in tin until cold.

Coincidentally I made this today Treesy but I call it Lemon Drizzle cake. One thing I would say is my cake definitely was not cooked in 45 minutes it was nearer 60. This was in a normal oven at 180. I also made one a few weeks ago but cooked it in a fan oven at 160 and it still took nearer an hour to cook.



It was lovely by the way and I am definitely not a cake maker!

yeah it is called that too,



I do cook 2 at a time every time -so dont know if that makes a difference - but 45 mins has always worked for me - ive got a fan assisted and actually put it on 150 degrees or it cooks too fast.



Just done 2 tonight and did 2 thurs night - all same time!!!!



Every oven is different - stab it with toothpick to check is best.

Chop one lemon in slices



Put two slices in a tall glass



add four ice cubes and generous helping of gin/vodka



top up with tonic ( if there's any room )



sorted.



repeat when necessary

Used to make a similar cake, orange drizzle, which was baked

in a loaf tin, then the orange juices drizzled through it when cold

and topped with chocolate. Very popular in our home.

When lemons are in abundance I slice them thinly & freeze them in

small containers for such things as gin & tonic etc.

Homemade lemonade, which my friend makes (married to T.C)

is also delicious
