I challenge everyone to make this cake - it is so easy and quick to make.



It is very sweet though - so I accept no responsibility for cost incurred for trips to the dentist



Irmek Tatli – Semolina Sponge Cake

Warning – seriously sweet… but seriously easy!!!!!!



Cake

3 Cay bardak/200g plain flour (if use s-r then don’t use baking powder)

3 Cay bardak/250g Irmek – (semolina flour)

2 cay bardak oil (sunflower etc)

3 cay bardak yogurt

3 Cay bardak/300g sugar

3 eggs

1 sachet vanilla

2 sachet baking powder (or not if using s-r flour)



Syrup

500g/3 Su bardak sugar

4 Su bardak water



(for diet version can use 2 su bardak sugar and 3 water - )



I use a 20cm X 30cm rectangle baking tray – but anything like this will do!



Recommend you line with greaseproof paper but not essential.



Oven 180 degrees C – but check cake after 20 mins. – Toothpick!!



1. Mix eggs and sugar

2. Add yogurt, oil, vanilla and Irmek – mix well.

3. Sift in flour and baking powder

1. Mix eggs and sugar

2. Add yogurt, oil, vanilla and Irmek – mix well.

3. Sift in flour and baking powder.

4. Mix very well.



5. Pour into tray – put in hot oven.



Syrup – bring to boil sugar and water stirring lots – then simmer 10 mins.



6. Take cooked cake from oven – cut into squares – then pour all syrup over – (seems a lot – but semolina will absorb it all – don’t worry)



7. Allow to cool – then enjoy.
