Anyone cooked it here, can you get all the ingredients or do I have to travel to the south?

• 3 tsp goose fat

• 600g beef shin, cut into large chunks

• 100g smoked streaky bacon , sliced

• 350g shallots or pearl onions, peeled

• 250g chestnut mushrooms (about 20)

• 2 garlic clove , sliced

• 1 bouquet garni (See know-how below)

• 1 tbsp tomato purée

• 750ml bottle red wine , Burgundy is good

I have cooked it here and very nice it was too. You can buy goose fat in Illeli in Alsancak and smoked streaky bacon. Everything else is pretty standard although the mushrooms are probably not chestnut it will not make a difference to the dish. Hopefully someone from your neck of the woods may be able to suggest an alternative shop to Illeli to save you the trip West.

I have seen the goose fat in jars and cans. At the moment it will probably be on the shelf that has the Christmas ingredients (cranberry sauce, mincemeat, etc). This is the second row from the left right next to the chiller cabinet with butter etc. I bought my beef from the butcher and just told them I wanted meat for slow cooking.

thats a surprise. My Turkish friend asked 2 butchers do they have beef shin/shank. They shrugged their shoulders.

Beef skirt is the best cut to use, its also called blade steak. If you have a slow cooker you can cook this dish for almost nothing, as it uses the same power as a light bulb.

Well they could hardly shrug their shins!

They must have them... nothing is thrown away. Maybe they keep them for themselves or their best customers/restaurateurs.
