Hi Everyone



I am opening a new sandwich bar which will also serve breakfast etc and daily specials like lasagne and salad, i would like to know the following-



What area of kyrenia would you like to see a sandwich bar open up?

What Kind of style i.e decor would you like?

Whats missing from the current sandwich bars that you would like to see i.e portions, sandwich fillings and cakes etc.



I have a good idea to the above but would like to know what the public prefers.

Near Alsancak please. Anything that is possible to get at M & S, please. Light modern decor. NO ethnic i.e. crappy wood furniture. No blaring music, no TV, no Fully English breakfast and really good wholemeal and granary bread. Proper coffee with a really good selection of same (Gloria Jeans NOT). Early Grey tea also. No steak and kidney pies, no sausage rolls etc., etc. Something with a bit of finesse, sadly lacking here I'm afraid. Good luck

I adore a good blue cheese and broccoli quiche and goat's cheese and ham pithiviers (little parcels of heaven in puff pastry) but then I am very spoiled as my youngest girl is a pastry chef.



Seriously though, I think it's important not to be tempted to go down the route of trying to offer all things to all people, decide where your market is and stick with it. That way you will establish your own identity and specialise within your chosen marketplace.

Hi, Agree with everyone above about thier tasty food suggestions, I have to say I used to go to Subway everyday in the UK because they make your sandwhich to your own preference, more pickle, more cheese ect, I want agree that customers 'eating in' should be provided with clean loo's, and to solve the what area, to delivery, sure to be a winner.

All your suggestions so far sound good, but if could just add my 2 penneth. Good quality bread, not the pre-packed tasteless stuff that they sell in the supermarkets and as already mentioned, good coffee NOT NESCAFE!

served in china mugs or a nice cup and saucer, not a bucket as seems to be the norm here!

Also just a thought but sausage, egg and bacon muffins in the mornings and a tradition in Sheffield, Sundays - Hot roast pork sandwiches made in a large soft white bap with stuffing, apple sauce, roast potatoes (sliced) and crackling. yum!

we have a roast dinner bap shop here where I live in uk.....like the above but choice of bap fillings, lamb, mint stuffing, beef etc and the porkwith the apple sauce etc. there are always queues outside the shop, just opened from 11am to 4am.......roasties are an extra option!!! delicious.............

Also, another thought, sandwiches should NOT be made until the person who is going to enjoy it is stood in front of you. You can have all the filliings, deli-style in a see through, serve-over counter, that way they can watch you make your sandwich and ask you not to put whatever in, and could they have a little more of whatever instead. Freshness is the keyword - you can also ask people whether they would like spread on their bread, or mayo, or nothing, not everyone likes bread-spreads.



Leek and smoked bacon quiches are also a best seller in my daughter's farmshop, but the very top seller is asparagus with mature cheddar/mozzarella mix.



You would also score if you made your own piccalillis, chutneys, garlic mayo etc. AND perhaps later, a panini grill might be a good idea.



I wish you every success. Will definitely visit your shop when you get it open.

Suehowlittle - yes people do prefer sandwiches to be made in front of them but for people in a rush a selection of sandwiches will be prepared freshly every morning and packaged on display, you have fabulous ideas, hope to meet you when we open.

Lots of posting so cant read all of them, but am I right you are not in Cyprus yet? If you were go and visit Cafe Boss and Village Kitchen those places will brighten your eyes on internal decoration and whats on the menu.



PS Do cream cheese and branston pickle. lovely. And make some blinnies for bacon and eggs with maple syrup.

The bread might be an issue, I gave up on it and now bring my own 'seeds' n ' grains from the UK and make my own. Hope you can get supplies of a variety of breads.

Hey Suelittle, yes the bread situation was for sure a challenge but luckily i found a brilliant baker and after about 10 tries he has mastered a few samples of bread that i know everyone will love, there will be something for everyone's taste. Cant stand the store brought bread myself.



Tinkie we will have many choices of vegetarian fillings and butter, low calorie fillings also are on the menu, fruits and yogurts and the choices of healthy breads. Altogether i think giving people the choice is the key here.



We have looked at a few locations for the sandwich bar and due to all you helpful advice on where you would prefer to see us we have now shortlisted some locations, hopefully somewhere central with parking so we can serve both sides of kyrenia. I do love cassinis sandwich bar think they are a lovely team of people but we hope to create our own identity and provide customers with a wide choice in sandwiches strictly.

Sandwichlady. Ok having a delivery service if you have enough staff to deal with the orders, we went to Cassinis mentioned by Tinkie, we waited 1 hr for our Jacket Potato and a sandwich while people were being served take -aways and the delivery boy took out 3 deliveries while we waited, Cassie did apologise saying he had mislaid our order but I did remind him after 1/2 hr we didn't go back again.

Thats a shame cassinis are quit on the ball when i have been sure it was a one off.



I am a very organised person maybe to organised lol sickness really.



This has just made me realize infact that maybe a system that i was considering should be implemented there will be staff handling delivery orders and separate staff handling the inhouse orders otherwise evrything just gets mixed up. Hows that for organisation!!! This is a family run business and boy will i make them work hard, my poor parents

It's interesting to hear others mentioning the bread issue. I think that this is your No. 1 problem here.

You say you have found a baker who has finally got it right. Will this be a sandwich type loaf? The problem with all the local sandwich loaves is that they are mostly designed for toast. They are fine for that.

The crusts are too hard & the bread just doesn't do it for me & often tastes slightly sweet. Also the slices are too thick & that rules out the local everyday bread for me too.

Ciabatta bread is the only acceptable alternative IMO, unless you really have found a suitable bread alternative.

If you can get the bread right then for me you will have cracked it. The fillings will be a doddle in comparison.

PS. I'm a Pret a Manger fan or was 15 years ago. I don't know what they are like now.

My daughter was so lucky, four years ago we found, on e-bay - offered by a dealer, a full subway ambient cabinet complete with 30 steel trays and 30 silicone subway bread moulds - 4 x (torpedoes). These take 225g of dough and are a foot long when risen/baked. What a fabulous buy. It revolutionised the bakery actually, the cabinet rose the bread an hour quicker and it was then used to cool the bread and store it prior to selling/filling it. Also it was on wheels so could just be wheeled into the farmshop when ready.



Silicone moulds are definitely the way to go for bread, keeps everything absolutely equal and standard.



What a marvellous challenge for you. I am sure you will enjoy it. Its just such a pity that Bako Northern are not here! In our shop we sell Honey and Oat Bread, Seeds'n'grains, cornbread and white. Our customers come from a very wide radius indeed. Bread is definitely the most important factor.

Forget the sandwiches you can get excellent ones from any cafe - go for baked potatoes with a selection of the above mentioned fillings. The ''Cyprus Tattie'' afterall, it's what Cyprus is famous for!
