I have had a bread-maker for almost two years now and ive just unpacked it,does anyone know which is the best flour to use and where to get it from.

Most supermakets sell bread flour, just make sure it says extra sade ekmek un, or if you like wholemeal, look for soke brand, it is in a brown packet, the boxes of soke bread mix are also excellent, you can get lots of different flavours. I use them all the time, they are great. Good luck with your breadmaker, I wouldn't be without mine.

well...



it seems very difficult to by proper bread flour in north cyprus,

although everyone reminds us that "bread mixes" are available



basically, soft household flour will not rise properly

you need a specialist strong winter wheat type, min 12% protein

...and you are very likely to be fobbed off with the wrong stuff



so I have three suggestions:



just buy a bread mix kit, these are all imported from turkey



contact a village bakery, see if they can let you have a bagful



get hold of a bread flour supplier: supposed to be a dealer in

the village of cirhangir, between ercan and gecitkale

...anyone know about this shop?

Sorry Andre 514, breadmaking works fine with local /Turkish flour



Agree with msg 2 that ''Soke kepekli, is good, mixed with normal white flour, maybe a mix of 100g kepekli to 350 g white would be ok. Available from many shops such as Ileli or Atakara in alsancak

Have been using Extra bread flour (green & white bag), available all shops for 8 years. It is quite high in gluten and gives excellent results.



I will say though that I found the little packets of Maya (dried yeast) were not quite sufficient to rise 1 kilo so now I use 1.5 packets and the rise is much better.

I go to our local bakery in Lefkosa, they sell bread flour there by the shopping bag, it really makes a

difference, bought some last week and paid 8 tl for 2 big bags.

when you buy the packet mixes they come with packs of yeast. The 7 grains is especially good, almost like good old fashioned granery bread.

I also like Söke bread mixes. They also have a rye bread mix and it is nearly as good as in Germany!!

I love the 7 grain one too and their wholemeal.

If you go to your local bakery you can also get fresh yeast. Lemar also sell it and I usually buy several as they freeze really well

I use so much of my baggage allowance bringing 7 grain flour from the UK. (10k at a time) If I can find it here then I will no longer have to do that. Where can I buy it here please?



It will also have the improver in it so something else I do not have to bring.

"improver" is ascorbic acid also called vitamin c helps the bread rise

so you can use a tiny squirt of lemon juice instead...

as regards buying vitamin c as a powder, this is very difficult in uk



but I will certainly try the "extra" flour as you suggest above in msg 6



10kg of flour in your luggage?!?!?! this is extra sad(e ekmek un) so if

possible does carrefor offer bread flour, branch near larnaca airport?

You misunderstand andre514, it is not the white flour which I bring from the UK, it is the 7 seeds'n'grains. My daugter has a bakery so can obtain if easily. Just the carting of it which bothers me. The mix is used 50/50 with the Extra flour here and I do get very good results.



The improver in the UK gives the bread a 3/4 day shelf life. I did not know it was ascorbic acid, thanks for that info.



Would still like to know though where to buy this seed mix here

Söke's flour and bread mixes are available at Lemar, but a lot of stores sell them. I can even get them in Dipkarpaz!!! And that's pretty amazing!!

If you buy Wholemeal flour in Cyprus, try not to keep it for more than a month. During the hot weather you will find your flour suddenly become alive with crawling mites? .These little darlings must originate from eggs laid whilst the wheat was growing. Not very nice!
