Can anyone tell me more about Pazi and what to do with it, a neighbour told me it is like spinach - is this right or does it have other uses?

Pazi is chard and can be used in any recipe which includes spinach. Locally it is cooked with black eyed beans and in many other recipes.

Somebody asked a question on the blog about whether rhubarb would grow in the Med area. Unfortunately, rhubarb cannot cope with the high summer temperatures and would likely wilt and only produce at best very thin stalks. The only way would be to grow it as an annual - planting the crowns in around October.

PAZI with wide leaves is also widely used for stuffing,like wine leaves.Cut the stem off,blanch it in some hottish water to soften up,transfereed them in a cold water bowl(or simply add some cold water in bowl with hot water in),prepair your stuffing and off you roll.



serving 2

1 cup rice

half diced Cypriot halloumi

tin of chopped tomatoes

half chopped onions

some finely chopped parsley

some dried or fresh mint

lemon juice

season it to your taste



roll it in PAZI leaves and place them in the pot tightly,so that they dont open up during cooking.Put 2 cups of water in,bring it boil,and simmer for further 20 mins......ish.You can turn over a side plate on top of them if the pot is not full.This also stops them from opening up,keeps them together.

Another tasty recipe to use pazi or chard to serve 3 or 4



2 bunches of pazi

1/3 lb of minced beef

1 onion

5 cloves of garlic

2 tbsp of olive oil

a pinch of black pepper

salt to taste



Soak the chard in cold water and add 2 tbsp of vinegar. Leave it in the water for 20 minutes. Wash and drain



In a large pot, add olive oil and cook mince over medium heat. Add chopped onion and garlic. Stir and cook until onion is tender. Add salt and pepper.



Chop chard and add it to the pot. Stir until it loses its volume. Turn the heat down to low. Cover the lid. Simmer for 15 minutes.

Just put some chickpeas into the propagator for fast germination. We planted them in home-made paper pots as they don't like being transplanted
