My wife and I will be leaving TRNC shortly. I would feel a bit of a fraud if I

continued posting as my thoughts are with another place and I will soon have

no connection here. This is, therefore, the last thread for me.



I will treasure the memories of Cyprus and Cyprus44.



I have only met four board members but I wish I had met so many more. It is

strange how, for example, I regard Bill (No1 Doyen) and Rob (ROBnJO) as

mates and I have never met them (probably just as well as I have a

reputation to think of!)



I shall miss:



Bill for his great humour and his love for his fellow inhabitants of this planet.

Rob for his omnipotence, cooking skills and being great fun.

Lilli and Guido for their valued fiendship and wonderful restaurant.

Skogsy for his great one liners.

Simbas 'cos she is Welsh.

Wyn for his passion whatever the subject.

Littlenige for saying it, as it is.

mmmmmm for his opinions whether I agreed or not.

Mark (ILC) for his knowledge and humour

I have a Barbadian recipe for you. It is called Souse. I don't know if you can get the ingredients here though. Buy a bag of dried and salted pigs ears, snouts and trotters from any supermarket in Barbados. Soak in cold water overnight. Rinse well before cooking. Boil until tender then cut into bite sized pieces. Add the juice of two limes, a finely chopped onion and a sliced cucumber to about 2 pints of the cooking water. The salt remaining in the water will make a brine which you pour over the meat in a bowl which will set like aspic in the fridge. Alternatively you can make it with a fresh pigs head and trotters, but after cooking remove the tongue and skin it before adding to the bowl of brine.
