| MEAT AND BEANS. (Makes about 6 good sized portions) Soak a packet of dried harricot beans overnight, drain and place in salted boiling water for about an hour or until tender. Keep taking off the white scum from the top of the water, otherwise the beans will be bitter. Roast half shoulder of lamb in the oven in the usual way. Leave to cool. Cut up into large chunks. Fry 4 medium sized onions in a pan with garlic and chillies (to taste). Throw in a few chopped tomatoes if you have any. You can add basil and oregano also if you like this. Get a large casserole pot, put in the fried onion mix, chunks of lamb, and cooked harricot beans with two squeezy tubes of tomato puree paste and two pints of water. Mix the ingredients altogether in the tomato sauce in the pot, and season. Cover the casserole dish and cook in the oven 150 degrees for approximately 1 hour. Serve with natural (greek) yoghurt, and chunky bread. Lovely. |

| recipe Soak Harricot Beans overnight,put on to boil for 1hr fry onions ,tomatoes ,mix all together with Beans and cook slowley add tomatoes paste and Parsley and fresh lemon juice for flavour results at the end yummie eat with bread/yogurt this is ideal for vegetarians.You can add meat if you like or cook the meat seperatley Roast potatoes :peel spuds place in tray with hot oil add onions,corrinader seeds this gives a nice aroma,cut up tomatoes and add a tablespoon of tomatoe puree/paste mix all together with spuds and cook until potatoes become crispy you can also add garlic.enjoy |
